TOMATO CHOKA

  • 1 lb ripe tomatoes
  • ½ medium onion, thinly sliced
  • ½ scotch bonnet pepper
  • 2 leaves chadon beni chopped.
  • ¼ c vegetable oil
  • 2 cloves of garlic Salt to taste.

Method

    1. Char tomatoes over an open flame or in broiler until the skin looks burnt & the flesh is beginning to crack open.
    2. Cool thoroughly & peel.
    3. Mash peeled tomatoes with a fork or pulse in blender with garlic cloves.
    4. Add chopped onions, chopped chadon beni and pepper and mix.
    5. Add salt to taste. Heat oil separately and throw on choka and mix thoroughly.
