SALTFISH ACCRA

  • 12 oz saltfish
  • 1 ½ c. Flour
  • 3 tsp baking powder
  • 1 tsp yeast
  • ¾ tsp black pepper
  • ½ tsp ground geera
  • ½ tsp chilli powder
  • 2 tsp minced onions
  • 2 tsp minced garlic
  • 2 tbs minced chives
  • 2 tbs minced chadon beni
  • 1 tbs minced pimento
  • Approximately 1 c. Water
  • Oil for deep frying

Method

    1. Boil saltfish for 20 minutes and flake with fork.
    2. Mix boiled and flaked saltfish with spices and seasonings.
    3. Mix dry ingredients & add to saltfish mix then add water. (May need more or less). Batter will be thick like pancake batter.
    4. Let sit for 10 minutes while oil hots on medium flame.
    5. Spoon into hot oil and fry until golden brown.
    Serve hot with Hosein’s Roti Shop's signature Tamarind Sauce or Mango Chutney.
